Neutral tomato base

Deep cooked tomato kept herb- and chilli-free so it can move between Italian, Middle Eastern, Spanish and Mexican directions.

What goes in

  • 4 × 800 g cans whole peeled tomatoes
  • 60 ml extra virgin olive oil
  • 60 g unsalted butter
  • 1 large onion (~225 g), halved
  • 1 medium carrot (~100 g), whole
  • 6 garlic cloves, lightly smashed
  • 1–2 tsp fine salt
  • Optional: 1 tbsp fish sauce for savoury depth
METHOD

Cook to the cue

  1. 01

    Heat oven to 150°C. Hand-crush tomatoes; reserve one can's worth for the end.

  2. 02

    Add olive oil, butter, onion, carrot, garlic and salt; bring to a gentle simmer.

  3. 03

    Cook uncovered in the oven 3–4 hours, folding the browned top in about hourly.

  4. 04

    Discard carrot; discard or blend the onion. Stir in the reserved fresh tomato for brightness; blend or leave rustic.

STORAGE

Cool quickly. Freeze in 300–400 ml flat pucks or ~250 ml tubs. Fridge ~5 days; freezer ~3 months.

Good canned whole tomatoes are fine. If using local fresh/Roma tomatoes, cook longer because they are usually wetter.
